OG: 1.052 FG: 1.012
Alcohol: 5.1% v/v (4.0% w/w)
Water: 1/2 tsp / gallon CaCl2
Grain: 15.6 lb. German Pilsner
0.59 lb. German cara pils
0.59 lb. German caramunich I
0.77 lb. British Caramel Malt
Mash: 93% efficiency
Mashed in grain, temp was a little warm about 60 C. Remove one third of mash with a strainer for decoction. Bring to a boil with constant stiring. boil for 15 minutes. Turns a nice brown color. add back to mash. Temp stablized at about 70 C. Hold 1 hour. Recirculate till wort is clear. Start sparge.
Boil: 70 minutes SG 1.048 13 gallons
add rehyrdated irish moss
Hops: 2.75 oz. Liberity (4.3% AA, 60 min.)
1.0 oz. Ultra (2.1% AA, 60 min.)
3 oz. Ultra (aroma)
Yeast: 1200 ml of Wyeast 2206 Bavarian Lager yeast to each carboy. Oxygenate with pure O2.
Log: Fermentation was rolling the next morning. Put into chest freezer at 42 F.
