A nice malty sweet lager for winter enjoyment.

Bitterness: 19 IBU
OG: 1.055 FG: 1.014
Alcohol: 5.3% v/v (4.2% w/w)
Water: Tapwater
Grain: 8 lb. German Vienna
3 lb. German Munich
5 oz. German Melanoidin
1 oz. Dehusked Carafa II
2 oz. Acidulated Malt
Mash: 78% efficiency
Single infusion mash at 153F for 60 minutes. Add 1 gallon decoction to 1 gallon boiling water, bring all to boil and reintroduce to mash for 165 mash out for 10 minutes. Continuous sparge with 170F water to collect 7.5 gal in brewpot.
Boil: 60 minutes SG 1.044 7.5 gallons
Hops: 1 oz. US Hallertauer (4.25% AA, 60 min.)
.5 oz. Hersbrucker (2.0% AA, 60 min.)
.5 oz. Hersbrucker (2.0% AA, 15 min.)
Yeast: Wyeast 2633 from a previous Oktoberfest batch.
Log: Ferment 10-14 days at 49F. Bring to room temp (64F) for 2 day diacetyl rest. Lager 30 days at 35F.
