Steep: Steep grain at 160°F for 40 minutes.
Boil: 60 minutes SG 1.107 3 gallons
9.3 lb. Briess Pale Malt (syrup extract)
1/2t Irish Moss
Hops: 1.5 oz. Centennial (9.8% AA, 60 min.)
1 oz. Fuggle (4.5% AA, 30 min.)
1 oz. Kent Goldings (5% AA, 10 min.)
1 oz. Fuggle (4.5% AA, 2 min.)
Yeast: 1 pint of starter using Wyeast Thames Valley #1275
Log: Primary Fermentation: 5 days.
Secondary Fermentation: 14 days.
Bottle Conditioning: 14 days.
Carbonation: 2.3 volumes Dried Malt Extract: 5.19 oz. for 5 gallons @ 70°F
Tasting: Bottoms up.
