Bitterness: 64 IBU
OG: 1.103 FG: 1.022
Alcohol: 10.5% v/v (8.2% w/w)
Water: Boiled tap water with 1 TBS 5.2 Mash Stabilizer and 1 tsp gypsum added.
Grain: 11 lb. American 2-row
1 lb. American crystal 120L
8 oz. American chocolate
1 lb. Roasted barley
Mash: 75% efficiency
Mash for 2 hours at 1.3 qt per pound of grain at 153F. Fly sparge with 170F water to attain 6.5 gal.
Boil: 60 minutes SG 1.082 6.5 gallons
2 lb. Brown sugar
8 oz. Honey
8 oz. Molasses
1 lb. Light dry malt extract
Add 1 lb DME at start of boil, add 1 tsp Irish Moss last 15 minutes, and add Honey, Brown Sugar and Molasses at last 5 minutes.
Hops: 1.5 oz. Magnum (14% AA, 60 min.)
1 oz. Kent Goldings (5% AA, 15 min.)
Yeast: WLP007 stepped up twice.
Log: AERATE WORT EXTREMELY WELL...
