Monkey Wheat Ale
Clone of a local artisan beer from the Old Harbor Brewery in Old San Juan, Puerto Rico. My second shot at a custom recipe at the behest of my lovely wife.

| Grain: | 8 oz. American crystal 10L 4 oz. Rolled oats 8 oz. Banana Mash 4 oz. Raw barley |

| Steep: | Steep all grains as the water comes to a boil. Remove brew pot from heat and let it stand for 20 minutes. | |||||||
| Boil: | 60 minutes | SG 1.032 | 4 gallons | |||||
| 8 oz. Light dry malt extract 1 lb. 8 oz. Wheat extract 4 oz. Brown sugar |

| Banana mash will be added in the last 5 minutes of the boil as will. Brown sugar will be added as with the extracts at the start of the boil. | ||||||||
| Hops: | .5 oz. Kent Goldings (5% AA, 60 min.) .5 oz. Cascade (aroma) |

| Yeast: | Good ale yeast; pitch at fermenting temp, 70°. Let it ferment for 10 days. | |||||||
| Log: | Primary Fermentation will take 10 days. One week of bottle conditioning before it is "lagered" for one more week before it is consumed. | |||||||
| Carbonation: | 2.3 volumes | Corn Sugar: 4.33 oz. for 5.5 gallons @ 70°F | ||||||
| Since this beer will be slightly sweet and light in body, the co2 will be felt throughout. Cascades will add a certain citrus bite to contrast with the banana and wheat flavors. | ||||||||
| Tasting: | Light, crisp banana and wheat soft drink for adults. | |||||||
