| Steep: | 30 min. Heat up to 160 deg and watch temp as it cools and add heat to keep above 150 deg. Bounce tea bag often to maximize yield! | |||||||

| Log: | Start fermentation inside at 65-70 deg, then move to ice chest and add ice to keep cool. Try to keep 57 deg for 10 days. | |||||||
