Quest for the Best Light Beer
This is intended to look like a Specialty beer and taste like a light
beer. This is the begining of my quest to make the perfect light beer.
Something that I can say I made and something that my wife will drink.

| Steep: | Place grains in muslin bag and 3 gallons of water. Warm to 160F and hold for 30 minutes. Remove grains & boil pot from burner and add 4 lbs of malt. | |||||||
| Boil: | 60 minutes | SG 1.054 | 3 gallons | |||||
| 4 lb. Alexanders Pale Malt Extract | ||||||||
| Pinch o firish moss | ||||||||
| Hops: | 3 oz. Saaz (3% AA, 60 min.) | |||||||
| Yeast: | Either Wyest 1056 or Nottingham dry (2 packets) , 1/2 quart starter the night before. | |||||||
| Log: | Primary 1 week secondary 1 week chill to 40 degress for 1 week and keg. | |||||||
| Carbonation: | 2.6 volumes | Keg: 13.4 psi @ 40°F | ||||||
