| Mash: | 65% efficiency | |||||||
| Long protein rest at 113 to 120°F, about an hour. Raise to 150° F, and hold for about 15 minutes. Raise to 158° F, and hold for 30 minutes. Check with iodine test for conversion. Mash out at 168° F. |

| Boil: | 90 minutes | SG 1.035 | 7 gallons | |||||
| Normal wise, 90 minutes is OK, but boil to reduce volume to about 5.5 gal before straining to primary fermenter. | ||||||||
| Hops: | 1 oz. Saaz (3.75% AA, 60 min.) 1 oz. Saaz (3.75% AA, 30 min.) 1 oz. Saaz (3.75% AA, 15 min.) |

| Yeast: | A good ale yeast is necessary, cool fermenting German ale style yeast is prefered. |

| Log: | Normal wise, start ferment at room temperature - you can transfer to glass fermenter after 20 to 24hours. Ferment to completion in cool cellar, 2 weeks minimum, normally 4 weeks. |

| Carbonation: | Transfer to clean vessel, add 1 cup of corn sugar prior to bottling. | |||||||
