January Porter
This is basically the same recipe as the Silver Dollar Porter from
Papazian.

| Water: | I always use filtered water using a counter-top carbon filter. To adjust pH of my sparge water I add 1 tsp of 88% Lactic acid to 5 gal. of water. |

| I mash in a combination mash/lauter tun made from a soda keg with a foam wrapping. I usually do infusion mashes since I have no way to apply heat to my mash tun (because of the rubber bottom). Added 1 tsp Gypsum to lower mash pH. |

| Yeast: | Used 1 qt starter of Wyeast #1056. I always step up a smack pack to 2 liters and ferment out. Then I divide the 2 liters into 7-8 12oz bottles. This gives me 7-8 5 gal batches from one smack pack! |
