| Grain: | 8 oz. Dextrine malt (Cara-Pils) 8 oz. British crystal 70-80L 8 oz. Raw wheat | |||||||
| Steep: | Steep grain in hop bag in 1.5 gal at 155 for 30 minutes. Sparge with additional 1.5 gal of water at 155 degrees. | |||||||
| Boil: | 60 minutes | SG 1.093 | 3 gallons | |||||
| 3 lb. 6 oz. Light malt extract 3 lb. Light dry malt extract | ||||||||
| Add liquid and dry malt and bring to boil.  Add Cascade and boil for 35 min then add Saaz and 1/2 tsp nutmeg and boil for additional 10. Turn off heat and toss in 6" cinnomon stick. Let steep for 15-20 min. Remove stick. | ||||||||

| Yeast: | Wyeast American Ale Yeast 1056 or 2 pkg Nottingham dry ale. Pitch yeast when 70-80 degrees. Primary for 4-5 days and rack to secondary for 10-14 days | |||||||
| Carbonation: | Add 4 oz Raspberry extract at bottling. Prime with 3/4 cup of corn sugar. | |||||||
