Sad Slovak Pilsner
My second try at Czechloslovakian Pilsner. This is the first attempt with all grain.

| Water: | I use 9 gallons of spring water in 1 gallon jugs. Add 1 teaspoon of gypsum to strike water. | |||||||

| Mash: | 75% efficiency | |||||||
| Mash grains in 3 gallons of 158° F water for 1 hour, do iodine test. Sparge with 4 gallons of 170° water until boil volume reaches 6.5 gallons. | ||||||||
| Boil: | 90 minutes | SG 1.044 | 6.5 gallons | |||||
| Add 1 teaspoon of Irish Moss at 30 and 15 minutes. |

| Log: | Brew date 3/3/01 ferment 55° F for 4 days, rack to secondary ferment 4 weeks at 55° F. Bottle with 1 qt of boiled guile from wort. Let sit for two week after bottling. | |||||||
