| Steep: | Crystal, chocolate and brown malts milled together and steeped in grain bag held in 4 gallons of H20 at 150° for 30 minutes. Grains removed after this 30 minutes. | |||||||
| Boil: | 75 minutes | SG 1.102 | 4 gallons | |||||
| 7.91 lb. Light malt extract 2.11 lb. Honey | ||||||||
| 1/4 tsp. of ground irish moss added during final 15minutes of boil. Wort chilled to 72degrees within 10minutes using homemade copper chiller. | ||||||||

| Yeast: | Wyeast American Ale Yeast II (1272) activator pack pitched at 72 degrees. | |||||||
| Log: | Brewed on 12/24/2005. Wort sparged into 2 gallons of RO water. Primary fermentation in 6.5 gal glass carboy. | |||||||
