This is a nice light colored, medium strength, VERY bitter and aromatic IPA with great head retention.

| I use 2 rubbermaid picnic coolers, one fitted with a phil's phalse bottom as a sparge / mash setup. | ||||||||
| Boil: | 60 minutes | SG 1.055 | 6 gallons | |||||
| 2 tsp gypsum added to water. 1 tsp Irish Moss added last 15 minutes. | ||||||||
| Hops: | 2 oz. Centennial (10.5% AA, 60 min.) 2 oz. Centennial (10.5% AA, 5 min.) 2 oz. Chinook (whole hops) (aroma) |

| Yeast: | Wyeast 1056 XL (liquid yeast packet) Popped 1 day before brewing. | |||||||
| Log: | brewing on May 2, 2004. Plan to do dry hopping on May 5 or 6, just after peak of fermentation activity. Ask me how it came out and I'll be happy to share the results! | |||||||
