| Log: | 7 days primary. I like to go 14 days in secondary. Haven't had any trouble. I know ales can be done in 14 days but I like to make sure it's real clear plus I feel it helps with the dycetal rest | |||||||

| I do not have a frige for storage so all of my ales are done in the basement and after kegging stay in the basement. Ambient is approx. 65 deg F. | ||||||||
| Tasting: | I tried Newcastle Brown ale months after making this brew and was surprised, if my memory is correct, at how much it tasted like the brew I made. Never had a brown ale prior to this recipe. When I go out to dinner New Castle is one of my favorite drinks of choice. Enjoy. | |||||||
