Nutty Wheat
This is a simple wheat beer with the addition of almond flavor. Just thought we would give it a try.

| Boil: | 60 minutes | SG 1.099 | 2.5 gallons | |||||
| 6.3 lb. Wheat extract | ||||||||
| Used 1/2 tsp of Irish Moss last 15 minutes | ||||||||
| Hops: | 1.5 oz. Hallertauer (4.25% AA, 60 min.) .5 oz. Hallertauer (4.25% AA, 15 min.) |

| Yeast: | Used large Wyeast #3056 (Bavarian Wheat) | |||||||
| Log: | Added 1 oz. of pure almond extract to secondary. Brewed on 9/19/99, racked after 9 days. Secondary for 17 days. | |||||||
| Carbonation: | Use 3/4 cup priming sugar. | |||||||
| Tasting: | This tastes like a traditional wheat with a little twist. Banana esters are evident with a very slight almond like aroma. Taste is a little bitter, but I expect it to smooth out with time. Maybe a little too much wheat, may add some light extract next time to reduce wheat content. | |||||||
