| Water: | Good old Turtle Creek tap water with 1 tsp gypsum and 1 TBS 5.2 Stabilizer added to grains in mash tun. | |||||||
| Grain: | 6 lb. American 2-row 3 lb. Wheat malt 8 oz. American crystal 40L |

| Mash: | 80% efficiency | |||||||
| 1 hour at 153°F. Pull 1.5 gallon decoction, boil for 5 minutes and add to the mash tun to bring temp to 170°F. Rest 10 minutes then continuous sparge with 170°F water to reach 7.0 gal. | ||||||||
| Boil: | 60 minutes | SG 1.040 | 7.0 gallons | |||||
| 1 tsp Irish Moss last 15 minutes. | ||||||||
| Hops: | 1 oz. Cascade (6% AA, 60 min.) .5 oz. Cascade (6% AA, 15 min.) |

| Yeast: | White Labs 001 in a 1 qt starter. | |||||||
| Log: | Primary fermentation at 65°F for 7-10 days or yeast until activity ceases. 14 days in secondary at 65°F. Peel and cube 2 large mangos, place in muslin bag and place directly in keg along with 1 quart organic mango juice. |

| Carbonation: | Force carbonate to 2.5 volumes. | |||||||
| Tasting: | This beer was EXCELLENT, a real hit with the ladies and guys as well. It has a nice malty backbone, minimal hop flavor/aroma and a nice mango nose. Poor head retention, and a bit on the sweet side, probably due to the fruit juice in the keg. This beer is great on a steamy summer night. I will make this one every year. Cheers! | |||||||
