Poor Man's Pale
2 lbs of 6-row (at 160 linter) has enough enzimes to convert up to 4.3 lbs of rice, so this recipe is at the limit of these proportions without effecting the ABV.

| Presoak rinsed, short grain overnight in enough water to cover 3 inches. Add soaked rice to 3 gallons boiling water and cook until tender (proteins are gelatinized). Cool to below 160F before adding malt and hold at 150-160 for 2 hours to convert all rice starch. | ||||||||
