Pale Ale
A very good summer beer - not too bitter. Excellent with spicy Thai dishes.

| Steep: | Grains in bag with heat on for 20 min. til reach 155°, then 30 min. rest at 155°, then turn on heat again til reach 178° approx. 10 min. and remove. | |||||||
| Boil: | 60 minutes | SG 1.071 | 4 gallons | |||||
| 6 lb. Light dry malt extract | ||||||||
| Definitely needs Irish moss or other clearing agent. Wyeast 1056 apparently does not settle very well. Add hops as noted (put a pinch more Galena in to balance). | ||||||||
| Hops: | .1 oz. Galena (12.5% AA, 60 min.) 1.5 oz. Liberty (3.4% AA, 60 min.) .5 oz. Liberty (3.4% AA, 30 min.) .5 oz. Fuggles (aroma) |

| Yeast: | Wyeast 1056 American Ale smack pack (did not make starter). | |||||||
| Log: | Bubbling at 11 hrs. Racked after 8 days - was very cloudy - took another 12 days to settle - still slightly cloudy with chill haze (did not have any irish moss on brew day). | |||||||
| Carbonation: | 3/4 cup corn sugar for priming and bottled. | |||||||
| Tasting: | Knew going in that this beer would be a little on the malt side of balanced - but making for girls for a party and need something not too bitter. This is definitely a keeper with some more (.1-.2 oz. Galena) hops added next time to bring fully into style. Update: give this beer 3 months in the bottle and it will reward you with greater hop bouquet and taste. Awesome aroma. Has suddenly become my favorite beer. |
