"Celebration" Pale Ale
This was originally going to be a SN Celebration clone but my starting gravity was too low. Instead of adding DME to the boil I simply lowered my original hop table and came up with this pale ale. It should be tasty!

| Protein rest @ 126 degrees for 20 min. Added boiling water to bring to 151 degrees Held for 70 mins. Sparged normally at 170 degrees. |

| Next time I will boil for 90 mins to reach a little higher gravity, but no worries here. | ||||||||

| Tasting: | Tasted when transfer to secondary. Hops evident but not overpowering. Definite alcohol present but a nice balance with a little malty sweetness (this should lessen with age). I am hoping that the hops will be more apparent after dry hopping in secondary. I will keep you posted. | |||||||
