| Add grains to 1.5 gal. water at 153° for 90 minutes. Sparge with 2 gal water at 173°. |

| 2 tsp. Irish moss last 20 minutes of boil. | ||||||||

| Yeast: | Cultivated yeast from a Sierra Nevada Pale Ale in a 1 quart starter. Can also use Wyeast 1056, or American Ale/California Ale yeast. |

| Log: | Primary fermentation 1 week at 69-72°F. Rack to secondary 2 weeks at 69-72°F. |

| Carbonation: | Priming with corn sugar. | |||||||
| Tasting: | A bitter sweet beer, but not to sweet. Can try Willamette hops for a subtle aroma and reduce Crystal malt by 0.5 Lbs. | |||||||
