First "real" home-batch! The goal - do it over and over till I get it right. If this is any indication, I'm doing pretty well! :)

| Steep: | Crystal malt was placed in a mesh bag in 1.5 gal of cold water. It was brought to 160° over 20 minutes, removed and then squeezed to get as much liquid out of the grains. | |||||||
| Boil: | 60 minutes | SG 1.190 | 1.5 gallons | |||||
| 6 lb. Amber dry malt extract | ||||||||
| Hops: | 1 oz. Cascade (5.4% AA, 60 min.) 1 oz. Cascade (aroma) |

| Yeast: | Wyeast American Ale II, no starter, 36 hour lag time. | |||||||
| Log: | Primary fermentation occured over 9 days. Racked to secondary for two days for settle and bottled. | |||||||
| Carbonation: | 2.0 volumes | Corn Sugar: 2.54 oz. for 4.15 gallons @ 68°F | ||||||
| Tasting: | At bottling time, this smells, looks, and tastes like Goose Island's Honkers Ale. Excellent. | |||||||
