Vienna-Stlye Lager

This is a partial mash adaptation of a local brew masters award winning recipe. The mash efficiency may seem high, but this is what I continually get with my partial mashes. If I leave it at 70% I wind up 10pts high on the OG.

Type: Partial mash Size: 5.25 gallons
Color:
11 HCU (~8 SRM)
Bitterness: 25 IBU
OG: 1.053 FG: 1.014
Alcohol: 5.0% v/v (4.0% w/w)
Water: 1 tsp of gypsum, 3 g of salt, 6 g of epsom salts
Grain: 4 lb. German Pilsner
1 lb. German Vienna
1 lb. German Munich
.5 lb. American crystal 60L
Mash: 85% efficiency
mash @ 155° F for 60 min., mash out @ 175° F for 10 min., batch sparge with 3 g water
Boil: 60 minutes SG 1.070 4 gallons
1.6 lb. Light dry malt extract
Hops: 2 oz. Tettnanger (4.5% AA, 60 min.)
1 oz. Saaz (3.75% AA, 1 min.)
Yeast: Southern German Lager yeast
