16 HCU (~10 SRM)
Bitterness: 43 IBU
OG: 1.048 FG: 1.010
Alcohol: 4.9% v/v (3.8% w/w)
Water: 1 TBS 5.2 Mash Stabilizer, 1 tsp Gypsum.
Grain: 7 lb. 8 oz. Rahr 2 Row Pale
4 oz. Dingemans Special Roast
2 oz. Dingemans Biscuit
12 oz. Dingemans Cara Pils
2 oz. Simpsons Chocolate
Mash: 75% efficiency
60 min at 153F with 1 qt per pound. 10 min at 170F (add boiling water while stirring mash vigorously until 170F is attained). Continuous sparge with 180F to collect 6 gal.
Boil: 60 minutes SG 1.040 6 gallons
1 tsp Irish Moss last 15 minutes.
Hops: .5 oz. Galena (12.5% AA, 60 min.)
1 oz. Kent Goldings (5.4% AA, 30 min.)
Yeast: Wyeast #1272 - American Ale Yeast II
Log: 3 to 5 days primary at 70F. 10 days secondary at 60F.
Carbonation: Keg and force carbonate
