BREWED ON 9-27-06,GOING TO RACK 10-6. I SECONDARY IN 2.8 GAL.AND 3 GAL.CARBOYS.THIS IS THE FIRST PITCHING OF THIS YEAST.I DONT MAKE STARTERS,JUST PITCH ON A SMALL BEER FIRST AND GO FROM THERE WITH SLURRIES.SCOTCH WILL BE NEXT.

THE YEAST ALMOST CRAWLED OUT OF THE CARBOY!
I WILL SECONDARY IN A 3 GAL.CARBOY AT 64-66F FOR AT LEAST 4 WEEKS
I BASE ALL RECIPES ON 3.4 GALS. YOU'ER GOING TO LOSE SOME TO THE KETTLE AND RACKING.
Carbonation: I'LL PRIME BOTTLES WITH DEMERARA SUGAR
2.8 GALS.= 27-12 oz.
3.0 GALS,= 30-12 oz.
Tasting: NOT GOING TO WORRY, IT'LL BE GOOD BEER IF NOT GREAT.

I KNOW I DIDN'T HAVE TO USE ALL THOSE SPECIALTY GRAINS AND BASE MALTS, BUT I CAN SO I DID.
