Pete's Niner Niner

Pete's Niner Niner is based on P. Smiths' Old #12 which is a Great Beer
I just wanted to try to make it a bit stronger, and as a partial mash
recipie.

Type: Partial mash Size: 5 gallons
Color:
56 HCU (~24 SRM)
Bitterness: 35 IBU
OG: 1.102 FG: 1.025
Alcohol: 9.9% v/v (7.8% w/w)
Water: Chicago Tap Water
Grain: .125 lb. British chocolate
.25 lb. Roasted barley
1 lb. 4 oz. American crystal 20L
8 lb. 8 oz. British pale
Mash: 75% efficiency
Mash in at 165 hold 160ish for 90 minutes sparge to make 6 gallons
Boil: 60 minutes SG 1.085 6 gallons
5 lb. Light dry malt extract
1/4 tsp Irish moss 45 min boil
2 tsp cinnamon 15 min boil
Hops: 2 oz. Cascade (7% AA, 60 min.)
Yeast: White Labs #WLP028 (Edinburgh Ale Yeast) in a 1 pint starter.
Carbonation: Bottled with 3/4 cup of corn sugar
