Kleveland Kolsch

This will be my first Kolsch style beer. The recipe is a combonation of other recipes that I have found for this style.

Type: All grain Size: 11 gallons
Color:
6 HCU (~5 SRM)
Bitterness: 24 IBU
OG: 1.051 FG: 1.007
Alcohol: 5.7% v/v (4.5% w/w)
Water: Lake Erie water straight from the tap.
Grain: 18 lb. German Pilsner
1.5 lb. Wheat malt
8 oz. Dextrine malt (Cara-Pils)
8 oz. Belgian CaraMunich
Mash: 73% efficiency
20 minutes at 125° F (Protien rest)
90 minutes at 154° F
10 minutes at 168° F (Mash out)
Boil: 75 minutes SG 1.040 14 gallons
2 tsp. Irish Moss added 15 minutes prior to end of the boil
Hops: 1.0 oz. Perle (8% AA, 75 min.)
.5 oz. Tettnanger (4.5% AA, 75 min.)
1.5 oz. Tettnanger (4.5% AA, 15 min.)
1 oz. Tettnanger (aroma)
Yeast: 2565 Kolsch Yeast
