Red Quill Ale

My most requested by family and friends. My mother in law absolutely raved about this one!

Beer: Red Quill Ale Style: American Amber Ale
Type: Extract w/grain Size: 5 gallons
Color:
27 HCU (~14 SRM)
Bitterness: 11 IBU
OG: 1.047 FG: 1.012
Alcohol: 4.5% v/v (3.6% w/w)
Water: Use filtered water
Grain: 8 oz. Belgian biscuit
4 oz. Dextrine malt (Cara-Pils)
2 oz. Belgian Special B
2 oz. British chocolate
Steep: Steep grains for 30 mins at 155°
Boil: 60 minutes SG 1.118 2 gallons
6 lb. Light malt extract
Add Whirlfloc at 45min
Hops: 1 oz. Kent Goldings (5% AA, 60 min.)
1 oz. Willamette (5% AA, 5 min.)
Yeast: Wyeast #1272 American Ale Yeast II
Log: Primary for 4-5 days, then rack to secondary for 7 days.
Carbonation: 3/4 cup corn sugar in 2 cups boiled water.
