This is a VERY potent and flavorfull beer, with a huge wheat flavor and very nice apricot taste and aroma.

Boil: 60 minutes SG 1.101 3.5 gallons
7.0 lb. Light malt extract
1.0 lb. Wheat extract
1.0 lb. Light dry malt extract
Take note that the 7.0 lbs of light malt extract is really Wheat malt extract, which isn't a choice in this software.
Hops: 1.0 oz. Hallertauer (4.25% AA, 60 min.)
1.0 oz. Hallertauer (3.1% AA, 60 min.)
.5 oz. Hallertauer (aroma)
Yeast: Wyeast #3056 Bavarian Wheat. Take note that the first time I used this yeast and similar recipe, it blew the lid off my plastic fermenter. This time I used a blowoff hose coming out of the center of my plastic lid, which worked well.
At the same time I added the yeast, I added 1.5 lbs of apricot filling that I bought at my local bakery. They had it with large chunks of apricot in it, within a apricot gel base.
Log: 9-12-2000 Brewed
9-26-2000 Bottled. At bottling I added 4.0 ounces of apricot
extract bought from my local beer indgredient supplier.
Carbonation: 2.5 volumes Corn Sugar: 4.02 oz. for 4.5 gallons @ 70°F
Tasting: This beer is a wonderfully different apricot wheat! It is a full tasting strong wheat, with a very nice balance of apricot. It has a wonderfull orange unfiltered glow to it, and I am very pleased with it overall.
