Dough in with 75°C H20 temp stablised at 60°C. add some cold H20 and bring temp to 55°C. Hold 10 minutes. Pull approx 1/4 of mash for decoction. Bring to a boil and boil about 5 min. Throw back into mash temp stable @ 70°C hold 1 hour. Start Sparge. We missed our intended volume and gravity |

Log: | I decided to turn one of my carboys into a fruit beer. 2 cans (15oz) Queen Anne Cherrys (Oregon brand)in heavy syrup were added. This was done in the primary fermenter after initial fementation had subsided. |
