This is a very good drinking beer. Very light and smooth. Excellant head retention. Very lightly hopped so the malty flavors are very prevelant.

Temperature controlled mashing: Cook rice in 6.5 qtrs water for 30 minutes. Let temp drop to 160F. Combine grains. Protein rest at 145F for 15-20 minutes. Raise temperature to 158F using 3.25 qts of 200F water. Test for starch conversion. Sparge with 3.25 gallons 170F water. | ||||||||
