add irish moss per. instructions on package after heat is shut off and before cooling add honey- if the honey is added wile still boiling it can harm the flavor. stir well then cool to around 60-80deg f. |

Yeast: | use one qt. of either california ale yeast or lauger yeast both will work,It depends on the availabe temps. |

Log: | with ale yeast ferment around 67deg with lauger yeast shoot for about 50deg on primary and secondary. both cycles run about a week then bottle for two to three weeks try breaking with tradition and using clear bottles, the different colors get interesting.(see carbonation section) |
