Yeast: | Try White Labs new Mexican Lager yeast; Wyeast 2007 or 2035 would be good, too.
Log: | Brewed in May '01. Bottled half of the batch and put the other half in a "Party Pig" [the poor man's kegging system]. The difference between the bottled half and the "kegged" half was very marked - the "kegged" half was great - clear, nice head retention for style, clean flavor. Good summer beer. Only change would be to increase the IBU, particular at finishing. Used the WL Mexican Lager w/starter with great results.
Carbonation: | Prime bottles with 4.5oz corn sugar |
