Water: Kentwood Springs Artesian Water (Louisiana, near Abita Spgs.)

8 oz. American crystal 10L
Mash: 71% efficiency
Dough in single infusion to 151°F for about 60 minutes 1.25 qt/# of grain...batch sparge with about 1.5 gal boiling water for mashout and second charge with 185F 4.5 gal.... about 8 gal going in to boil...1.038 SG
Boil: 60 minutes SG 1.039 7 gallons
1 tsp Irish Moss or Whirlfloc Tab @ 15 Min. before flameout
Hops: 1 oz. Crystal (4.3% AA, 60 min.)
.25 oz. Crystal (4.3% AA, 30 min.)
.25 oz. Crystal (4.3% AA, 15 min.)
.5 oz. Crystal (aroma)
Yeast: S-23 Saflager 22g (2 packets)
Log: 7/6/2012: Fermented in Minibrew conical. Pitched both packs of yeast directly to 75°F wort with no aeration. Set in brew fridge immediately to reach target temperature of 56°F. Airlock activity evident within about 6 hours (brew was in the 60's by then). Steadily chugging after 18 hours at 57°F. Primary for 2-3 weeks, dump sediment, then Secondary for about 6 weeks, then keg.
Carbonation: 3.0 volumes Keg: 16.5 psi @ 38°F
Tasting: Malt character similar to the current all-malt Michelob Lager. No hop nose to speak of, on the dry side and great head retention. Hop bitterness balances out malt just right. Good Stuff.
