5 lb. 0 oz. American 6-row
5 lb. 0 oz. American Vienna
1 lb. 0 oz. Dextrine malt (Cara-Pils)
3 lb. 0 oz. Flaked corn
Mash: 60% efficiency
Cereal mash - 2 gallons water,corn,1# 2 row - 150 deg steep for 30 minutes, then slowly bring to boil
MI - 4 gals / 155 deg water/ 138 rest/ 30 mins
Add cereal mash / 158 deg rest / 1 hr
MO - 1.5 gals / 212 deg water/ 174 deg rest 15 mins
30 min sparge to collect 13 gallons
Boil: 60 minutes SG 1.043 13 gallons
1 lb. 7.5 oz. Corn sugar
IM at 10 mins.
Note: corn syrup listed was actually Raw Agave nectar
Hops: 1 oz. Nugget (12% AA, 60 min.)
.5 oz. Cascade (aroma)
.5 oz. Kent Goldings (aroma)
Yeast: Repitch of previous lager (Bohemian Wyeast) 1/2 gallon
Log: SG1.062
primary ferment at 60 degrees, secondary onto gelatin and lager at 40 degrees for 2-4 weeks
Carbonation: 2.4 volumes Keg: 11.2 psi @ 40°F
