First Wit
My first attempt at a Belgian Wit.

Steep: | Placed wheat and oats into a steeping bag. Began steep at 120° Ended steep at 160° (about 30 minutes) |

-60: 3.3 lbs Wheat Malt Extract -45: 1 oz Saaz hop pellets and 1/2 zest of one large orange. -15: 3.3 lbs Light Malt Extract -5: 1/2 orange zest and 1/2 tsp. ground coriander |

Log: | Fermentation began with 12 hours and continued (slowly) for nearly 3 weeks. Temps were quite cool, though. After 5 weeks in primary racked to secondary for additional 2 weeks. |

Carbonation: | Boiled 3/4" cup of wild clover honey in 2 cups water, let cool and poured directly into empty bottling bucket. |

Tasting: | After 3 weeks in the bottle this beer is rather tasty. I will definitely brew this again. |
