Orange Spice Stout

I use many grains for complex flavor. The use of spices and oranges is my second attempt. All the grains total 100 ounces, so tuning can be done easily by percent. Each ounce is 1% of the total. Neet.

1 lb. Marris Otter
12 oz. German Pilsner
6 oz. Gambrinus Munich
4 oz. American victory
2 oz. Dextrine malt (Cara-Pils
4 oz. English Brown Malt
4 oz. British Crystal 50--60L
8 oz. British chocolate
2 oz. American black patent
6 oz. Roasted barley
6 oz. Flaked barley
4 oz. Rolled oats
4 oz. Flaked wheat
4 oz. Scottish crystal 100L
Mash: 81% efficiency
Double mash. Room temp mash-in. Boost to 124 for 30 min. Boost to 153 rising to 158 over 90 min. Boost to 185 for 5 min WHILE mashing-in American 2 Row directly to protein rest for 30 min. Time it such that you boost little mash to 153 for 10 min while main mash cools to 153 also. Then combine. 80 min starch conversion with slow rise to 157. Mashout at 168.

.007 oz. Corriander(1) Tbsp. whole, 45 min. in boil
.1 oz. Tartaric acid, 1/2 tsp. 15 min. in boil
.25 oz. Coffee ( 2 oz)
.05 oz. Star Anise, (5) small segments of star, 45 min in boil
.1 oz. Cinnemon, 1/2" stick pc., 45 min. in boil
.05 oz. Clove (3), 45 min. in boil
.05 oz. Yeast Energiser, 1/2 tsp.

Hops: .2 oz. Hallertauer (began as 5.2) (5% AA, 45 min.)
.33 oz. Amarillo (began as 8.5) (8.2% AA, 45 min.)
.33 oz. Amarillo (began as 8.5) (8.2% AA, 20 min.)
.25 oz. Hallertauer (began as 5.2) (5% AA, 8 min.)
.34 oz. Amarillo (began as 8.5) (8.2% AA, 8 min.)
Yeast: White Labs WLP005 British ale.
Log: Brewed Sept 7-8. primary ferment only 8 days. Cold condition 3 days. Bottled 9-20-00.
Carbonation: 10 Tbsp.corn sugar across 24 bottles.
Tasting: Interesting taste at bottling. Orange doesn't jump out, but effect is there. Spices also are affecting result nicely. Gravity was 1.022... too high for reasons yet unknown, but I think result is fine. Bittering is perfect sutble and pleasing.
