Sandy Beach pale ale

Another pale ale off the top of my head. Wanted more hops, specifically centennial for aroma and flavor, with a little cascade. Looks to be a bit more bitter than I wanted, but we'll see.

18 HCU (~11 SRM)
Bitterness: 52 IBU
OG: 1.053 FG: 1.010
Alcohol: 5.5% v/v (4.3% w/w)
Water: 1 teaspoon burton water salts
Grain: 1.25 lb. American crystal 40L
Steep: Steeped in a bag 30 minutes at 155°
Boil: 60 minutes SG 1.053 5 gallons
7 lb. Light malt extract
1 teaspoon irish moss 15 minutes
Hops: .33 oz. Cascade (5.6% AA, 60 min.)
.5 oz. Cascade (5.6% AA, 20 min.)
1 oz. Centennial (9.7% AA, 20 min.)
1 oz. Cascade (5.6% AA, 10 min.)
.66 oz. Cascade (5.6% AA, 5 min.)
1 oz. Centennial (9.7% AA, 5 min.)
Yeast: Safale US-56
Log: Brewed 9/24/2006. I messed up, putting in the high alpha centennial in earlier in the boil than I meant to, (wasn't wearing my glasses) bumping up the bitterness higher than I wanted. Should have been about 40 IBU.

10/1/2006: Racked to secondary, SG 1.010 with a perfect 70 degree ferment. Hoppy and tasty. Doesn't seem like it will be too bitter.

10/20/2006: Bottling day. A little too bitter and light on the malt, this will require a bit of aging. Too bad. It will come together in about four months I expect, and taste just fine. I'll let you know, but I like to drink them earlier than that, unless I made them to age. Leave out the bittering hops altogether to put it about 45 IBU.
Carbonation: This one will be bottled, 3/4 cup corn sugar
Tasting: 10/29/2006: It's pretty much conditioned and still has a young beer taste. The bitterness does not seem bad at all, it's firm, not unpleasant and barely overpowers the malt. Nice aroma, but not a super hop presense. I expect in about a month or so it will be perfect. Next time I would dry hop it to bring out a little more aroma.

12/1/2006: Sweet maltiness, no noticable bitterness, light on the hop aroma. Next time I'd cut back to a pound of crystal malt and dry hop it, otherwise it's fine.
