lesh ale

Lesh Ale is my third all grain batch and first 11 gallon batch. it's a
great ale, packs a punch and is hopped just about right. turned out a
little lighter then i wanted..i was aiming for a bass like color but got
more of a esb color. anyways, this is a tribute to Phil Lesh, former
bassist for the Grateful Dead.

19 HCU (~11 SRM)
Bitterness: 30 IBU
OG: 1.061 FG: 1.014
Alcohol: 6.1% v/v (4.8% w/w)
Water: 1tsp gyspum in mash water
1tsp gypsum in sparge water plus 1/2tsp acid blend.
Grain: 19 lb. American 2-row
1 lb. Belgian aromatic
2 lb. American crystal 60L
1 lb. Flaked barley
Mash: 72% efficiency
mash in 10gallon GOTT cooler, singe infusion at 154F. mash out after 90
minutes at 168F.
Boil: 90 minutes SG 1.055 12.25 gallons
1.5 lb. Brown sugar
3tsp irish moss last 10 minutes of boil
Hops: 3 oz. Fuggles (3.4% AA, 60 min.)
1 oz. Kent Goldings (5.2% AA, 45 min.)
1 oz. Kent Goldings (5.2% AA, 30 min.)
.5 oz. Kent Goldings (5.2% AA, 15 min.)
Yeast: 2 40oz starters of wyeast london 1028
Log: divided batch into two 5.5gallon carboys..fermented one at 72F in
upstairs closest and one at 64F in basement as a test. one fermented at
72F has more esters while the one fermented at 64F is much cleaner in
taste. both are great though!
Carbonation: force carbonated in keg.
Tasting: will probably add some chocolate malt for color..maybe add another pound
of aromatic. was going to dry hop but didn't have any hop bags to use
in keg.
