Wahoo Helles

Brew Date 4/13/97. My fourth all-grain batch. Friends said this was really good brew. I have to agree.
The Wyeast 2124 absolutely needs at least 3 weeks from start of fermentation before drinking.
That's slower than the warm 2112 yeast I've used before but it did produce a nice brew. The name comes
from another favorite pastime of mine - watching my Cleveland Indians play at the Jake. This beer is
similar to the Ballpark Draft by Crooked River Brewing Co. sold only at the baseball park.

Water: 1.5 g. CaSO4 (Gypsum) per 4 gal. (3/4 tsp)
1 mL 88% Lactic Acid per 3 gal.
City of Cleveland water, aka Lake Erie highball, is a little light on Calcium (35ppm)
and slightly basic (7.2pH)
Grain: 6 lb. American 2-row
1 lb. 8 oz. American Munich
8 oz. American crystal 40L
6 oz. Dextrine malt (Cara-Pils)
Mash: 80% efficiency
0:00 Doughin: 2 gal 150F -> 115F
0:30 Added 1 gal more -> 122F (50C)
1:15 1 gal more added & heated to 140F. 2gal of sparge heated up.
1:30 60C reached. (140F)
2:00 Mash transferred to kettle. Sparge water put in 5 gal jug.(135F).
2:15 Mash reaches 70C (158F).
4:00 Sparge 5 gal. @ 170F.
Boil: 75 minutes SG 1.039 6.25 gallons
4:45 Boil Started. 1.041 of 6.5 gal.
5:10 1.25 oz Hops added.
6:00 Boil Stopped.
7:00 Wort Chilled 160F -> 85F.
7:30 Yeast pitched. 1.046 OG.
Hops: 1.75 oz. Liberty (3.3% AA, 60 min.)
.5 oz. Liberty (aroma)
Yeast: Wyeast 2124 in 1 qt starter.
Log: 4/14/97 After 14 hrs @ 62F, transferred to lager chamber @ 53F.
4/15/97 Lager chamber lowered to 50F.
4/17/97 Racked to secondary. 1.022 SG. (4 days). 50F.
4/24/97 Temp lowered to 48F.
5/05/97 Racked to Keg. 39F.
Carbonation: Artificial.
Tasting: Nice full bodied brew. Not extra heavy but full of malt flavor muted
by a light dose of hops.
