Theoretical Strawberry Wheat

A theoretical strawberry wheat beer meant to satisfy the thirst of an all female baby shower guest list.

Color:
5 HCU (~4 SRM)
Bitterness: 16 IBU
OG: 1.042 FG: 1.008
Alcohol: 4.4% v/v (3.4% w/w)
Water: R.O. water, no minerals added.
Grain: 3.5 lb. American 2-row
4 lb. Wheat malt
.6 lb. American crystal 20L
Mash: 76% efficiency
Mash: 155*F for 70 minutes (I mashed hot to counteract the Nottingham ale yeast's tendency to over-attenuate).
Boil: 60 minutes SG 1.031 7.5 gallons
Hops: .66 oz. Cascade (6% AA, 60 min.)
Yeast: Nottingham dry ale yeast, rehydrated.
Log: Add 10 lbs fresh ripe strawberries to secondary for 10 days. Freeze strawberries first and thaw them in a sanitized container to release more fruit flavor.
Carbonation: Keg and force carb.
Tasting: Fantastic fresh strawberry nose and flavor. Uncanny fresh fruit impact. Pleased a crowd of 30+ non-beer drinkers. I'll definitely brew this one again, perhaps with a little more malt impact... but the level of strawberry would be unchanged.
