Type: Extract w/grain Size: 4.75 gallons

5 HCU (~5 SRM)
Bitterness: 22 IBU
OG: 1.062 FG: 1.015
Alcohol: 6.1% v/v (4.8% w/w)
Water: Windsor's Magic well water
Grain: 3 lb. American 2-row
2 lb. Wheat malt
1 lb. American Vienna
8 oz. American crystal 10L
12 oz. Flaked oats
.025 oz. Grains of Pardise ( 2 grms )
Steep: Mash grains in 3 gallon water at 155 to 160 d.f. When mash is brought to temp, place in oven at 200 degrees for 1 hr. Sparge w/ 6 qts 170 d.f. water.
Boil: 70 minutes SG 1.099 3 gallons
3 lb. Wheat extract
Add Wheat extract, stirring well. When dissolved bring kettle to boil. After hot break, add 1 oz Perle and start 60 min timer.@ 30 min add 1/2 oz Liberty hops and 2 heaping TBS Irish Moss. @ 45 min add crushed Grains of Paradise. @ 58 min add 1/2 oz remaining Liberty hops. @6o min remove kettle from heat and force cool to 80 d.f. Areate wort, pitch yeast and attach blowby rig.
Ferment at 65 d.f.
Hops: 1 oz. Perle (8% AA, 60 min.)
.5 oz. Liberty (4% AA, 30 min.)
.5 oz. Liberty (aroma)
Yeast: 2 pkgs DanStar Windsor yeast in 60 oz slurry
