Alcohol: 5.1% v/v (4.0% w/w)
Water: Tacoma water with 2 tsp of 5.2 added to the mash.
Grain: 1.30 lb. American 2-row
3.3 lb. Wheat malt
0.7 lb. American Munich
.2 lb. American crystal 40L
Mash: 75% efficiency
Two step infusion: 120 degrees for 30 minutes, 150 degress for 45 minutes. Mash out at 168 for 15 minutes.
Boil: 60 minutes SG 1.040 3.8 gallons
Whole hops used in the following schedule.
Hops: .6 oz. Tettnanger (4.5% AA, 60 min.)
0.4 oz. Cascade (6% AA, 30 min.)
0.4 oz. Tettnanger (4.5% AA, 15 min.)
Yeast: White Labs American Hefeweizen WLP320.
Log: Ferment seven days at room temperature (68 - 70 degrees).
Rack to secondary and ferment two days under refrigeration.
Keg and used forced C02 carbonation.
