BIG Honey Wheat

Made for my HONEY, carbonated with clover honey only

Alcohol: 4.9% v/v (3.8% w/w)
Water: Low chlorine municipal water source
Grain: 4 lb. American 2-row
5 lb. Wheat malt
1 lb. American crystal 20L
Mash: 72% efficiency
2 step mash, 35 minutes at 125F, 45 minutes at 158F
Boil: 60 minutes SG 1.045 6 gallons
1 tsp Irish moss at 15 minutes
Hops: .5 oz. Hallertauer (4.25% AA, 60 min.)
.25 oz. Kent Goldings (5% AA, 15 min.)
.25 oz. Kent Goldings (5% AA, 5 min.)
Yeast: Danstar Windsor Ale yeast, 12 grams for 5 gallons, rehydrated at 90 degrees for 30 minutes.
Log: Brewed on 5-13-06, fermented at 70F for 6 days. Carbonated with 1 cup of pure clover honey and bottled. Couldnt wait, had to try it 2 days after the bottle... well carbonated and slightly sweet.
Carbonation: Carbonated with 1 cup of clover honey, diluted in 2 cups of boiled water.
Tasting: Well balanced wheat taste... slightly sweet, satifying beer with great head retention.
