Workin in the Garden Wheat

This was intended to be an early warm weather wheat beer to
accompany the endless gardening tasks around my house. My other hobby
is gardening, and healthy gardens grow healthy weeds.

Type: All grain Size: 5.5 gallons
Color:
4 HCU (~4 SRM)
Bitterness: 16 IBU
OG: 1.054 FG: 1.012
Alcohol: 5.4% v/v (4.2% w/w)
Water: My water tastes very good, but is alkaline and quite hard, sort of out
of character for the Mid-Atlantic. I acidify my mash and sparge
water with 27% phosphoric acid.
Grain: 5 lb. American 2-row
5 lb. Wheat malt
8 oz. American crystal 10L
Mash: 75% efficiency
Single infusion mash at 155° for 90 minutes, verified conversion
with iodine test. Sparged to obtain 6.5 gallons for boil.
Boil: 60 minutes SG 1.045 6.5 gallons
1 tsp. Irish moss at 45 minutes.
Hops: 1 oz. Hallertauer Hersbrucker (5% AA, 60 min.)
Yeast: Wyeast 1056 in a 1.25 liter starter.
Log: Primary at 60° for 6 days, secondary at 60° for 7 days. Dry hopped with
1/2 oz hallertau pellets in secondary.
Carbonation: 2.6 volumes Corn Sugar: 5.07 oz. for 5.5 gallons @ 60°F
Tasting: Tasted at 7 days post bottling. Carbonation is not complete, but good
for this early. This is exactly what I was shooting for! A tart, refreshing
brew, a little bigger than the style, but then, I tend to brew bigger than style.
Cutting the 2 row to 4 lbs would bring this one right in line. I really like
this stuff, and it has received appreciative praise from my SO, and
my non-brewing, much-tasting buddy.
