New Home Fall Cider

Excellent Cider for the Fall. Compliments a night around the campfire very well.

Beer: New Home Fall Cider Style: American Wheat
Type: All grain Size: 4.5 gallons
Color:
4 HCU (~4 SRM)
Bitterness: 0 IBU
OG: 1.038 FG: 1.009
Alcohol: 3.7% v/v (2.9% w/w)
Water: Household tap water. I have a household activated carbon de-chlorination system, so we have no Cl- in our water.
Grain: 2 lb. 0 oz. Wheat malt
Mash: 76% efficiency
Mash the wheat malt at 160...sparge out at 100 to 5.5 gallons.
Boil: 60 minutes SG 1.031 5.5 gallons
1 lb. Brown sugar
1 lb. Corn sugar
12 oz. Honey
Add 10 pounds of sliced fresh apples (I have trees in my yard, so I use the non-edible ones for cider) to the mash before it boils. Allow the apples to remain in through the boil until you have boil-over problems. Remove the apples.
Add 4 tsp of cinnamon to the boil after you remove the apples.
Hops:
Yeast: Good quality Champagne yeast. It began to ferment within 6 hours of putting into the fermenter.
