Honey Wheat

This is my first from scratch all-grain recipe. So far so good, I checked SG when racking to the 2nd stage fermentation and it was 5.3% and had a nice smooth flavor, even the wife liked it and she doesn't care for any alcohol.

3 HCU (~3 SRM)
Bitterness: 25 IBU
OG: 1.061 FG: 1.020
Alcohol: 5.3% v/v (4.1% w/w)
Water: Used 1.5 Tsp of gypsum in mash water
Grain: 4.86 lb. American 2-row
4.86 lb. Flaked wheat
Mash: 78% efficiency
Single infusion mash at 150F for 90 min. Mashed out at 170 for 10 min.
Grain bill is actually 5lb of each
Boil: 90 minutes SG 1.050 7 gallons
1.94 lb. Honey
added Irish moss for last 15 min.
Hops: 1.5 oz. Tettnanger (4.5% AA, 60 min.)
1 oz. Fuggles (4.75% AA, 5 min.)
Yeast: Weast 1007 German Ale
Log: Brewed 17 Feb 01 - 6 day primary, racked on 23 Feb 01 - 8 day secondary. Will bottle 3 Marh 01. 13 March taste great - I love it and so does my non-beer drinkning wife
Carbonation: Will use just over 3/4 cup of corn sugar
