Cherry Wheat Half 'n Half

My first wheat beer. The name comes from the fact that half of the batch
is flavored and half isn't. I'm making it for a friend in the hope that
he'll learn to like beer.

Beer: Cherry Wheat Half 'n Half Style: American Wheat
Type: Partial mash Size: 2.75 gallons
Color:
3 HCU (~3 SRM)
Bitterness: 21 IBU
OG: 1.046 FG: 1.014
Alcohol: 4.1% v/v (3.2% w/w)
Water: 3 tsp. yeast nutrient in 3 gallons of pre-boiled water. No other treatment
used.
Grain: 8.00 oz. British pale
8.00 oz. Dextrine malt (Cara-Pils)
Mash: 43% efficiency
Added the grains to 2 quarts of water. Brought temperature up to about
150-156F and removed from heat. Let pot stand covered for aproximately
1 hour then removed grains from pot to a large colander. Recirculated
the first runnings then rinsed grains with 3 quarts of 180-190F water.
Collected run-off in brewpot.
Boil: 60 minutes SG 1.040 3.125 gallons
3.00 lb. Wheat extract
Irish moss added 20-25 minutes before the end of the boil.
Hops: .50 oz. Hallertauer Hersbrucker (5% AA, 60 min.)
Yeast: White Labs WLP005 British Ale Yeast
Log: Brewed on 7/7/00. Yeast pitched about 12:35 a.m. on 7/8/00.
Fermented for three days in plastic primary. Racked to glass carboy
on 7/10/00. Let clear for 8 days. Bottled on 7/18/00. Gelatine finings
and cherry flavoring (in half of batch) added at bottling. Will let
stand 1 week at fermentation temp. then will transfer to a 40-42F
refrigerator for 3 weeks.
Carbonation: 2.5 volumes Honey: 2.62 oz. for 2.50 gallons @ 75°F
