Flatonyourback Cherry Ale

Beer: Flatonyourback Cherry Ale Style: American Pale Ale
Type: Extract w/grain Size: 5 gallons
Color:
9 HCU (~7 SRM)
Bitterness: 9 IBU
OG: 1.081 FG: 1.020
Alcohol: 7.8% v/v (6.1% w/w)
Water: I use 5 gallons of Absopure bottled water, as my tap water is awful here.
Grain: .5 lb. American crystal 10L
Steep: Put .5lbs of crystal malt in grain bag. Add to 2 gallons of cold water. Bring to boil. Remove malt. Add DME, 2ozs Saaz hops, and continue the boil.
Boil: 45 minutes SG 1.202 2 gallons
6 lb. Light dry malt extract
3 lb. Honey
10 lb. cherries
After boil, follow Charlie Papazians' directions for Cherries in the Snow.
Hops: 2 oz. Saaz (4.0% AA, 60 min.)
1 oz. Saaz (4.0% AA, 15 min.)
Yeast: 1 Package of dry ale yeast.
Log: This is a "trial and error" batch. I will be brewing this one very soon. After brewing, I will age this one 10 months before testing, if I can hang on that long!!
Carbonation: 2.6 volumes Keg: 13.4 psi @ 40°F
