Alcohol: 5.1% v/v (4.0% w/w)
Water: Brewing water allowed to stand overnight after addition of 1/4 Camden tablet to remove chloramines and chlorine
Grain: 3kg 600g British pale
250g Dextrine malt (Cara-Pils)
50g Caramalt
250g Light Munich
50g British crystal 95-115L
100g Wheat malt
Mash: 65% efficiency
Single step infusion around 65C
Boil: 75 minutes SG 1.079 15 liters
800g Light dry malt extract
Irish moss addition at 15 minutes
DME addition at 50 minutes
Hops: 10g Target (11% AA, 60 min.)
35g Perle (6.7% AA, 60 min.)
30g Cascade (5.8% AA, 15 min.)
28g Cascade (aroma)
Yeast: White labs Californmia Ale -1 litre starter
Log: Primary/Secondary at 18C
20g of cascade late hoped into secondary
