Phoenix Lemon

1.0 lbs macerated lemons with rind added in final 10 minutes

Color:
10 HCU (~7 SRM)
Bitterness: 23 IBU
OG: 1.060 FG: 1.010
Alcohol: 6.4% v/v (5.0% w/w)
Water: Baltimore city tap water (better than you think-- it has to be!)
Grain: 1 lb. American crystal 20L
Steep: Steep grains in bag for 15 minutes prior to boil-- when water is approximately 160 deg. F, increasing to 180.
Boil: 90 minutes SG 1.075 4 gallons
4 lb. Light dry malt extract
2.5 lb. Honey
Boil all ingredients 30 minutes prior to adding cascade hops--90 minute boil total
Hops: 1 oz. Cascade (6% AA, 60 min.)
1 oz. Fuggles (4.75% AA, 15 min.)
Yeast: rehydrated Danstar Nottingham
Log: to be fermented at 65-70 deg. F. to completion--primary only, rack off excess yeast.
Carbonation: Carbonate with boiled cane sugar
Tasting: Can't wait to taste it.
